The Specific inactivated yeast (LIS) has a high concentration of micro- and macro-molecules that are easily accessible and assimilable. It has been proven to enhance the characteristics of bubbles (perlage) and foam persistence. This yeast can be utilized for re-fermentation or immediately after second fermentation, making it ideal for sparkling and fine sparkling wines.
