With the right amounts of ammoniacal nitrogen, microelements, sterols, and cofactors, it supports favorable fermentation and regulates the redox system to preserve primary varietal aromas. Great for low sulfite fermentation and second fermentation. Perfect for producing wines with true varietal expression and a sense of terroir as the main focus. By protecting against sensory interference, it promotes wines that honor the original methods of winemaking. Especially useful in L.S.A. rehydration, where it shortens shelf life, and for VIW strains, allowing for direct, dry inoculation.
